Shoreline Lake Bistro begins $15 million renovations, aiming for a new standard of lakeside dining

Shoreline Lake American Bistro is preparing for a major transformation as part of a $15 million renovation that will upgrade nearly every part of the location. The project includes a kitchen expansion, pizza oven, interior redesign, new roof, additional bathrooms and foundation reinforcement.

Boathouse Manager Chris Nicol says the kitchen improvements are among the most exciting, noting that they will allow the Bistro to broaden its menu, increase bandwidth and potentially offer dinner service.

The restaurant will close during construction, but much of the lake’s activity like sailing classes, summer camps and rentals will continue as scheduled. Food trucks may also be featured during the summer to keep the area lively, according to Nicol.

Even as the changes unfold, the American Bistro’s identity is rooted in its lakeside location, Nicol said. Nicol said that everything in the restaurant revolves around the lake, from the culture and color schemes to decor and menu items. For Nicol, the setting remains a “peaceful escape from Silicon Valley” where one can enjoy nature.

First-time guests at the bistro are often surprised to discover such an extensive recreational and dining experience exists so close to home, Nicol said.

“[Visitors are surprised] that all of what we offer even exists, that a lake with boating and a restaurant, with a great view, is right in their back yard and they have never been here before,” Nicol said.

Looking into the future, Nicol hopes that the Bistro becomes known for its made-from-scratch food served in a welcoming, local environment. After renovations, the team is planning to expand its menu — including pizza, homemade desserts and more catering options.

“With the new kitchen renovation, it gives us a chance to rebrand with a culture of tradition and excellence, even more than we already have.”

For anyone who hasn’t visited yet, Nicol offers a simple pitch: “Get ready for the time of your life.”
